This recipe is not just a feast for the taste buds; it’s a celebration of flavors, textures, and culinary finesse.

For the Shrimp:

  • 1 pound easy-peel shrimp
  • 5 cloves garlic, smashed and minced
  • Olive oil for cooking
  • Butter for cooking
  • Salt and pepper to taste
  • A splash of white wine (optional)

For the Dressing:

  • 1 large shallot, thinly sliced
  • 1/2 cup white wine vinegar
  • Fresh thyme, chopped
  • Olive oil

For the Salad:

  • 1 ripe avocado
  • Canned beets or fresh beets (for psychedelic candy beets, if available)
  • Cherry tomatoes, halved
  • Blood oranges, sliced

Additional Garnishes:

  • Minced parsley for garnish

Preparing the Garlic

To kick things off, we’ll start by smashing and mincing some garlic. I’m using about five cloves, but feel free to adjust based on your garlic preferences. Smashing the garlic not only adds a fun element to the process (because, well, I’m a fan), but it also helps release the oils, making peeling a breeze.

Cooking the Shrimp

I’ve got some easy-peel shrimp here, and I’m opting to make a half batch. Peel and devein the shrimp, pat them dry, and then cook them up in a combination of olive oil and butter. A dash of salt and pepper, a splash of white wine if you fancy, and your shrimp are good to go!

Crafting the Dressing

For the dressing, we’re using a generous amount of shallots, providing a pop of flavor without the overpowering bite of onions. Combine the shallots with white wine vinegar and fresh thyme for a delightful infusion. Don’t be afraid to experiment with the shallots; they add a healthy crunch to the salad.

Avocado, Beets, and Tomatoes

Peel, slice, and savor the perfection of a ripe avocado. If you can get your hands on psychedelic candy beets, go for it! Otherwise, regular beets work just as well. Thinly slice the avocado, prep the beets, and halve some cherry tomatoes. The key is in the presentation!

Blood Orange Elegance

Enhance the salad with the beauty and subtle flavor of blood oranges. The dark color and delicate taste add a unique touch to the dish. Slice them up, arrange them artfully, and revel in the stunning colors.

Finishing Touches

With all the components ready, it’s time to bring everything together. Shake up the dressing in a mason jar, ensuring a perfect blend of flavors. Toss the tomatoes in the dressing for an extra burst of taste. Arrange the beets, tomatoes, avocado, and shrimp on a plate, adding a drizzle of the delectable dressing. Top it off with a sprinkle of minced parsley for a final touch.
